Be careful where you step, I drooled everywhere. nyrisa, if that is not some secret family recipe would you consider sharing that? Yum.
I baked two pumpkins yesterday, I'm going to make pumpkin muffins and pumpkin fudge (maybe on the fudge).

Please if you don't receive the fudge recipe from me feel free to remind me? I've the attention span of a gnat.

Thanksgiving: this was actually discussed today. My habit/tradition of feeding the tribes was met with agreement and concurrence. So, there may or may not be places at table... I'll let Her say yay or nay, as it IS Her home I'm suggesting opening up...

Simple v Exotic: The best "exotic" recipes I know are the simplest.

Butternut Squash: eh, I'm going to do a risotto for game night tomorrow night with it. Maybe. I think... Since that'll be only adults, I might just do a true bagna cauda with it. It's not like it's that difficult to do an oil fondue...

Pumpkin:

Well K, if you don't go to Donna's for Thanksgiving, you can come over here for dinner. Picked up a turkey today and plan to do brussel sprouts, garden salad, homemade stuffing, homemade cranberry sauce and either yam or herbed mashed potatoes. Being in canada our Thanksgiving is Oct 8th.

Sure, since I'll have enough leftover turkey to feed half of the country! Damn, I swear the farmers feed their birds growth hormones, all the ones I seen were enough to feed at least 10 people!

I have a crowd pleaser butternut dish - even the evil micheal bauer San Fran Chronicle Critic loves it.

Butternutsquash gratin

peel and slice 1/8-1/4 in thick lengthwise butter nut (remove seed - duh) 1 or less
yellow onions slices - 1 medium
fresh sage minced - 1/2 bunch
Willow dry aged jack cheese grated - not a whole lot - 1/4 - 1/2 cup
Grana Padano grated 1/4 cup or less
mildly buttered bread crumbs 1.5 cups?
cream 2-4 cups
s & p
parchment and foil
9x13? pyrex or casserole pan - oven worthy shallow dish.

Toss onions, butter nut, dry jack and some sage and s & p together in a giant bowl till evenly mixed
dump into a casserole - pyrex  pan. shimmy and arrange so slices of everything are laying fairly flat - should be about 2- 3 inches in depth.

At edge or corner slowly trickle in the cream - do not pour it all around as you will wash cheese and seasonings to the bottom of the pan - think infiltration.
when the cream is about 3/4 to 1/2 in from the top layer of stuff you have plenty.  Now toss parm dry jack, some sage, s&p and bread crumbs together and sprinkle evenly - you want an even 1/2in layer. cover with parchment and then foil tightly.
Put in oven at 400 degrees for about 1/2 an hour.  Remove foil and parchment and cook till cripsy golden brown,  Allow to sit for about 10-15 minutes prior to serving.
