put the onions in the fridge for about an hour before you chop next time, that way the oil sets and you dont get the onion tears and you dont end up smellin onions for days... Garlic, roast it first, slice whole head in half, drizzle with olive oil, roast at 450 til soft, then just squish cloves out, mash and use...
