When i was in Mexico several years ago the family i was visiting one weekend ate their pork skins wrapped in a tortilla with salsa.  Just like the pork skins were meat.  In Mexico they called the porkskins  "chicharrones".  i think that name is also on the pork rind package we buy in the states.

Time for this girl to do some sweeping.  It is nice enough to go outside and sweep the porch and wipe off the rocking chairs.

fluffy, i shared a shop with some mexican welders in vegas and they used to eat that almost everyday for lunch. one day i finally tried it to their never ending insistence.  i can't take it unless it's deepfried and covered with spicy "stuff"....it always smelled good though, it's just the texture that gets me off.  blech.

think i'll finish up that road tar now...

The thing i like about pork rinds is that they eat like a chip but have no carbs.

Supper ideas:
Chicken Enchiladas, Spinach Enchiladas, and/or Scallop, Crab and Shrimp Enchiladas with white cheese sauce, rice and mexican style mixed vegetables.  A relatively low fat entree, especially if the cheese is reduced fat cheese.
Chicken/Raisin Chile Relleno - a Poblano chile stuffed with chicken and raisins in a white cream sauce - coated with a whipped eggwhite batter and fried.  Rice and mexican style vegetables.

For desert - Flan

this girl will be in the kitchen WHIPPING the egg whites.
