Fish madras curry... Take four steaks of haddock or halibut and fry slowly (over low heat) with sesame or groundnut oil add one chopped large onion and two chopped spring onions and build the curry - throw in some turmeric, coriander, red chilli, fenugreek, black peppercorns, poppy seeds and sea salt, throw in a pot of live Greek yogurt with a dash of groundnut oil and a teaspoonful of vinegar and bring it all together into a rich, creamy consistency.. Serve with plain basmati or pilau rice and crisp light beer.
