It's that time of year again, the holidays are approaching. I thought I would share a yummy new appetizer recipe I tried this weekend and others could share some of their new recipes or old faves.

Spinach Cheese Squares:

1C milk
1C flour
1 tsp baking soda
3 eggs
12 oz cheddar cheese, shredded
1 med onion, diced
2 pkg frozen spinach, thawed
3 tbsp butter/margarine

Preheat oven to 350. Beat together eggs and milk, add flour and baking soda and mix well. Add cheese, onions and spinach. Mix well. Put butter/margarine in 9x12 inch pan and put in oven until butter is melted. Spread mixture in pan and bake for 30 minutes. Let cool for 15 minutes and cut into squares.

Sounds interesting. I wonder why so much flour, shouldn't be necessary. But to each their own.

I don't have a recipe right now, but I can cook. Speaking of veggies, we no longer steam or boil them. We fry them in butter. It all started with the rice. Then it was asparagus. Alot of people do not like asparagus, but when you fry it in butter, they might change their mind. And greenbeans. That came next. EXQUISITE I say, really good.

I'll have to see if I can get the olman's recipe for cheesecake. It is from the 1950s and bears almost no resemblance to what you would buy in the store. I talked him into making a couple and took them to a party, even though they were saved for last, they were gone in about 90 seconds.

It is also getting to be chicken paprikash time. I usually tend to make it between thankgiving and christmas, sometimes before. That would be now. A couple of people have asked about it at this point. I have already put the recipe out, but if someone wants it again just say so.

Anyway, that stuff you are talking about sounds pretty good. I might give it a try. Actually it seems similar to old style baked macaroni and cheese, but using spinach instead, except for the onion.

Around here we are onion and garlic freaks. If I try your recipe, I will likely add some garlic. But then you would have to handcuff me to a chair to keep me from adding garlic to almost anything I cook.

Anyway, keep em coming. I am always looking for new ideas.

 Mom`s macaroni and cheese(made w/ cheese tortellini)

Package of tortellinis,1 1/2 cups cheddar cheese
1/2 cup milk(or water),spice to taste,1/2 teaspoon salt,3/4 cup of black walnuts

Prep tortellini and put in mixing bowl with cheddar cheese (Cabotts,of course),nuts, milk, spices and fold.

Lay mixture in casserole dish, top with more cheddar and nuts, and bake 30-40 mins.,at 350 .

I like it extra well done and crispy.
