Yes, I totally agree. pastry chefs are weird. Anal, perhaps ? ( Sorry, chocolate lovers). Bakers, imo, have a li'l more leeway, that is, bakers of some breads. Although, even making a good pizza dough can be a challenge. Living at sea level and having to take that, plus humidity, etc., into account can be a pain in the ass. I also prefer to leave that, usually, to those more anally inclined, or living at higher elevations.. That's why I order my pies Fed Exed from Chicago.

HEY, I'm a dang good amatuer baker. Id rather bake then cook and although can do both well, find baking therapeutic. So cakes, pies, scones, pizza, pasta,ravoli and cakes and such are fun! But I dont do as much as Zi dont like to have the stuff around me as I do like my own baking products.

Try Haagen Das Coconut/Pineapple. Or, even better, have the  P.F. Changs' banana spring roll dessert. They serve it with the same ice cream . Caution: Make sure you have your napkin in your lap.

A book called the Cake Mix Doctor. you can take cake mixes and make truly spectacular things. So a brownie mix becomes cherry cheesecake brownies.

I have never forgiven B & Js for sending my favourite icecream to the graveyard - Vanilla Chocolate/Caramel Fudge. I could almost forgive them if they put more raspberry in their Bohemian Raspberry...

So now I make my own - to serve two. Cornish icecream, pieces of fudge brownies, swirls of caramel or chocolate. If I kept it to myself that's double the calories and a bigger waistline... much nicer to share and make us both fat [;)]

Pineapple caramelized with ginger and cinnamon: for 2 to 4 persons

1 Pineapple
1 table spoon of butter/margarine
Cinnamon powder
Ginger powder
Sugar (to taste)
2 table spoon of lemon/orange/or other fruitjuice


Take a full riped pineapple
Peel it
Cut in slices about 1 cm thick (sorry about inches that I dont know of)

In a large skillet, melt 15 grams or a table spoon of butter (margarine works well also)
Once melted ,  put slices of pineapple, roast them   then pour  cinnamon and ginger on every side of the fruit.
dilute the spices with the 2 table spoon of fruit juice.

Let cook for 2 more minutes before pouring sugar( to taste) and let this mix caramelized.

You can serve it with Vanilla Ice cream or just eat it that way.

I love spiced up fruit, so that sounds delicious and very simple/easy to do. I also like spiced pears, mango, peaches and apples. With the summer coming up our markets offer such a huge variety of different fruits and so cheaply too. During the summer months I tend to live on fresh fruit, new potatoes and fresh runner beans sliced thinly.

Fruit lovers here is one more:

2 small dishes of fresh strawberries
1 good handfull of mint
2 table spoon of  black grounded pepper
1 lemon juice
white sugar (to taste)

Wash and cut in 4 pieces the strawberries
Chop  mint as thin as possible
Press the lemon juice

put everything in a jar/container then add the two spoon of grounded black pepper ans white sugar to taste. mix everything and lay in the fridge for a few hours. served with ice cram, over some pancakes or just with whipped cream.

PS: you can replace or add to the chopped mint some chopped basil.
