For those of you too far from Canadia, nanaimo bars are a divine confection with a crust layer of nuts, coconut, cookie crumbs, a middle layer of fluffy-creamy stuff that can be all kinds of flavours, and a chocolate ganache top layer.

Our Lady Rainfire was wise enough to have her wedding at a place that had them on the pastry tray.  I did not share with those at my table.  Actually, I sort of.. um.... GRABBED.  But I was in nEEEEEED I tell you!!

The filling is a mixture of icing sugar, custard power and butter. After which you can add coloring and flavoring.

my work has gotten cheap this year. they won't send out for a cake for birthdays anymore. so we have to bring our own.

i've threatened to make this in just under a fortnight, and i think they'll kill me. after the snarf it down and after they've recovered from the sugar blow out.
