I was just on another message and saw "greedytop" say to someone.."What hot sauce" and it made me make this posting...my three favorite hot sauces are "Siracha Hot Chili Sauce", Cholula, and Tapatio..what are yours? (oh there is this one jamiaican one i like too but i forget the name....it has the word "jump" in it though..ha ha[sm=slurp.gif]

due to gastronomic ill effects i rarely consume hot sauces, gives me heartburn from hell!  however once a year on xmas morning i will have something called tiger sauce on my dad's bacon/egg/cheese sandwiches.  the whole family gets together for dad's sammies and mom's turkey dinner.  once in a blue moon i might have a good horseradish with the new years' ham.  the kind that brings tears to your eyes and burns out any upper respiratory difficulties you may have had.

recipe for hot sauce:

Olive oil.. add some ground hot pepper ... that's about it... or i use chopped up little red hot peppers... i really wing it with sauces frankly... sorry...

I think it was actually named "Death" one small tiny drop on the end of a toothpick set my mouth ABLAZE!

Until my move I had over 100 hot sauces in my house.  I love a lot of them and cannot pic a fav habanero, scotch bonnet, or jalapeño sauce etc.   A few names hat come mind are:

Ring Of Fire
Uncle Bru Bru
Dave’s line of sauces
Da’ Bomb
Ground Zero
Satan’s Blood
Scoured Woman
Smack My Ass & Call Me Sally
100% Pain

 
…and almost all the forms & brands of Jamaican Jerk  marinades and fi8nishing sauces.

I'll always go back to Dave's Insanity as a benchmark, and Jump Up and Kiss Me is good.  Datil Do It is another favorite (Datil peppers are close to Habaneros). Matouk's Calypso is great with Jamaican food.

And when my own recipe is perfected and bottled, it will literally be blue in color.

I love Tiger Sauce because this has the right balance of heat plus a sweetness and I feel this is excellent if you want to prepare Szechuan Chinese food.  I have no ill effects of heartburn from this sauce, either.  

If you really want to add horseradish to ham or roast beef, there is a horseradish cheddar cheese that is sold in my local store.  That cheese really brings on heat and if you ate that, your sinuses would clear up!  [:D]

I've had most all of the "Insanity" type stuff and I find they are mostly all burn and no flavor, which for me is pointless. El Yucateco Habanero sauce has a good flavor to it.

I always have Bufalo Chipotle sauce on hand, but it's not my favorite. Don't remember the name of my favorite; think it's Embasa Chipotle sauce.

I use a lot of the Sriracha and the chile/garlic sauce/paste.

I have a strong dislike for vinegary hot sauces like Texas Pete or Tabasco.

I make my own salsas. Used to offer three different table salsas at the restaurant, which I often rotated. Staple was a pumpkin seed-habanero salsa, Sikil P'ak.

They also make your first-named favourite, playfulotter: Sriracha, which will be a very familiar bottle to many, at least on the U.S. west coast.
 
Also, someone mentioned horseradish.  There's a really nice Horseradish Dijon Mustard, by Beaver.  They also make my favourite sandwich condiment, their Dijon Garlic Mustard; once you have it, you'll never give it up for others. 
 
I've heard good things about their Wasabi Horseradish, too.  I highly recommend the brand name, in general:

my grandma used to make some with rum in it, Ill have to beg her for the recipe, but it absolutely rocks!

(and for some reason it gets yummier the more of it you eat :P)

I am frankly quite fond of good old Pace Picante - Medium.  I also love the green Tabasco, and El Yucateca Habanero.  El Yuc, cheap, cheap, cheap too - and basically so hot that I really just need to picture it in my head and not actually put it in anything.  LOL
