As far as the bigger "stores" are concerned, the classic story is normally, the more you pay the better quality you will get. A good leather worker who you can go to can often charge less but I know that some people prefer to deal with larger companies. I agree with the previous comments that say padded is the way to go, though equally if you get a high quality of leather the cuffs alone can be comfortable enough to wear for long periods by themselves (I own a pair of wrist and ankle cuffs, one unpadded, one with a layer of suede-like material that are both comfortable enough to wear for long periods and haven't been greatly affected by sweat).
