I was just wondering if anyone would be interested in a cookie/bar recipe swap?[:)] Maybe a favorite recipe that you make every year. Doesn't have to be your own, but you at least have to have made it once. lol

Just thought it would be something fun and festive to do. (I'm trying to get in the holiday mood here people so humor me.)[sm=lol.gif]



Here's mine;


Layered Peanut Butter Bars

Cookie Base
1 pouch (1 lb 1.5 oz) Betty Crocker® peanut butter cookie mix
3 tablespoons vegetable oil
1 tablespoon water
1 egg

Filling
1/2 cup butter, softened
1/2 cup creamy peanut butter
2 cups powdered sugar
2 teaspoons milk
Frosting
1 cup semisweet chocolate chips
1/4 cup butter

Frosting
1 cup semisweet chocolate chips
1/4 cup butter


1. Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
2. In large bowl, stir all Cookie Base ingredients until soft dough forms. Press dough in bottom of pan using floured fingers. Bake 15 to 18 minutes or until golden brown. Cool completely, about 1 hour.
3. In small bowl, beat all Filling ingredients with electric mixer on medium speed until smooth. Spread mixture evenly over cookie base.
4. In microwavable bowl, microwave all Frosting ingredients on High 30 seconds; stir until smooth. Cool 10 minutes; spread over filling. Refrigerate 30 minutes or until set. For bars, cut into 9 rows by 4 rows.

LOL Ok, it will have to be after Christmas though. Will be busy other wise.[;)] And not baking cookies. LOL! Now where's that recipe???

Doing?????? Seems to me your Christmas shopping was done month's ago before the hurricane.
Now all you are doing is trying to get peanut butter cups off of me. So, you have time to make me cookies.

Rum Balls

1 6 ounce pkg (1 cup) of semisweet chocolate pieces
1/2 cup sugar
1/3 cup rum
3 Tbls light corn syrup
2 cups crushed nilla waffers
1 cup ground walnuts

In a saucepan melt chocolate over low heat. Remove from heat. Stir in sugar, rum, wafers, and nuts. Shape into miniture 1 inch balls, using 2 teaspoon mixture for each. Roll in sugar. Store in an air tight container in the fridge. Makes 4 dozen.

Okay, so it isn't a cookie, but I do make them every year, and you can substitute bourbon or brandy for the rum if you prefer.

Since you're succumed to my wishes. Here is a recipe for you. Makes more than a few cookies though

2cups of butter
2 cups of sugar
2 cups of brown sugar....dark is best for cookies


Cream together add 4 eggs and 2tsp vanilla. I usually have a heavy hand with the vanilla

Then mix together 4 cups of flour
5 cups of oatmeal
2tsp baking powder
2tsp baking soda

Put a small amount of oatmeal in a blender until it turns to powder. Mix together all ingredients. Add a 24ounce bag of chips. One 8 ounce candy bar finely grated and 3 cups of chopped nuts.

Place golf ball sized cookies on ungreased cookie sheet. 325 degrees until done.

Mmmmm....cookies. Anyway, the following recipe came out of my local newspaper. They are absolutely drool worthy and they taste like a holiday cookie. Plus I love vanilla chai. They don't actually contain tea, but they are awesome.

Vanilla Chai Icebox Shortbread Cookies

2 1/3 c flour
2 tsp pumpkin pie spice
2 tsp ground ginger
1/2 tsp ground allspice
1/2 tsp ground cardamom
1 c unsalted butter softened
1 c granulated sugar
3tbsp honey
1/4 tsp salt
2 lg egg yolks
1 med size vanilla bean

for icing:
1c confectioners' sugar
2tsp vanilla extract (more vanilla bean scraping if desired)
1tbsp water

In large bowl, whisk together flour and spices, set aside. Combine butter, sugar, honey and salt beating with an electric mixer or wooden spoon until light and fluffly. Add egg yolks one at a time and beat until smooth. Using a small knife, split the vanilla bean lengthwise in half. Scrape the seeds from both sides of the pod with the tip of the knife and add to butter mixture. Beat to combine. Add the flour mixture, 1 c at a time blending until fully incorporated. Divide dough in half and ttransfer each half to wax paper. Shape into a 12 inch log, rectangle or square. Chill for at least 2 hours or overnight. Preheat oven to 350. Cut logs into 1/8 inch thick slices and place 1/2 inch apart on a parchment-lined baking sheet. Bake on center rack until lightly browned on edges, about 10-12 min. Transfer to racks to cool. For icing. In small bowl, combine ingredients until smooth and transfer to a plastic bag...drizzle decoratively across tops.

Makes 3-4 dozen.

I've noticed that it does better with a tad more vanilla and pumpkin pie spice, a tad less ginger, and a tiny bit more cardamom. That's my preference anyway. Alright, now I have to go make some cookies. Yay!

For the diabetics out there....and since you made me find my cookie book. Yes, a book of recipes I've collected that have nothing but cookie recipes.

Sugar Free Chocolate Chip
1/2 cup margarine softened
4tsp liquid sweetener...aka stevia or whatever suits you
1 1/2 tsp vanilla
1 egg
1Cup +2 tbsp flour
2tsp baking powder
1/4 tsp soda
1/4 cup water
1/2 cup semisweet chocolate chips
1/4 cup chopped nuts

Combine margarine, sweetener, vanilla and egg. Beat until light and fluffy.
Add dry ingredients. Mix Well. Stir in chips and nuts
Ungreased cookie sheet at 425 for 10-12 minutes or until done.

How I bake cookies.

Preheat Oven

Open package of Pillsbury cookie dough of choice

Take a spoonfull of dough and place on cookie pan

Repeat till cookie pan is coverd with spoonfulls of dough having each piece a few inches apart

Place cookie pan in oven

Leave in oven for about 10 to 15 minuets till cookies smell good and are done

Take out cookies and allow to cool

Enjoy cookies with a glass of cold milk

All done

You should eat some raw cookie dough.

Here here KatyLied!!! Raw cookie dough!! How can you not eat the raw cookie dough? They use pasturized eggs, so the risk of samonella is not statistically significant.

Or e coli or what ever it is you get from eggs.

Chocolate Covered Cherry Cordial Cookies

3/4 Cup Butter Flavored Crisco
1 1/4 Cup Light Brown Sugar
2 Tablespoons Milk
1 Tablespoon Rum Extract
1 Egg

1 3/4 Cup Flour
1 Teaspoon Salt
3/4 Teaspoon Baking Soda
1 Cup Chopped Sun-dried Cherries

I cup Melted Chocolate (for candy making)

Mix first five ingredients til light and fluffy. Combine dry ingredients and mix into creamed mixture. Stir in cherries. Drop by rounded teaspoons onto cookie sheet. Bake at 375 10 to 13 minutes. Cool completely. Drizzle cooled cookies with melted chocolate or dip one half of each cookie.

Pecan Sandies

1 1/2 Cup Butter
1/2 Cup Sugar
1/2 Cup Powdered Sugar
1 Teaspoon Vanilla
3 Cups flour
1/2 Teaspoon salt
2 Cups finely ground pecans

32 Pecan halves
Additional powdered sugar for dusting.

Mix butter and sugars til light and fluffy. Add vanilla, then flour, salt and pecans.

Divide dough in two. Form into 2" round logs. Roll in waxed paper and chill at least 4 hours or overnight.

Slice chilled logs into 1/2 inch thick slices. Place slices on cookie sheet. Top each cookie with a pecan half. Bake at 350 for 15 -18 minutes or until edges are lightly golden. Cool on racks. Lightly dust cooled cookies with powdered sugar.
