Because they want to.  Its their right.  They don't like the democratic candidate.  I could find a number of other reasons.  Southerners vote how they want just like everyone else.  There is no one overpowering reason.

The conventional story says that LBJ's embrace of Civil Rights turned Southern Democrats into Republicans. Bill Moyers reports LBJ said so himself when he signed the legislation.

Among the amazing thing about this election is that Obama is a Northern Democrat---long time since we've seen that!

Well, you asked a very general question.  It is actually not possible to categorize such a large group of people so easily.   The people in Alabam might get roused by the thought of gun control while those here in Arkansas might be worried about the economy while others might just vote the way they always have.  See what I'm saying?  Narrow the question and you can get a better answer. 
Sometimes, the flaw is in how you ask something.  In my tiny part of the south, people seemed afraid of Obama leaning too far to the left.  That is what most of them told me when I talked to them.  Very few seemed willing to quote any specifics.

You could ask the same question about why Republicans have the hottest chicks.

Suggestions abound...

It can be said that with civil and voting rights law the dems lost the south.

Still, there is such things as issue and policy and they are more rural and thus many say...more 'conservative.'

Many are farmers and also many of those that without their federal subsidies...would lose their farms. Those subsidies have gone way up under the GOP.

OR, you could say that the south today proves Lincoln wrong...

The GOP can fool most of them...most of the time.
