I've never switched out pork for chicken.  I have used pork instead of veal in some recipes.  I don't think it would hurt to try it.  Cooking is trial and error anyway; at least it is for me.

I would not switch the meat in this recipe. But that is a personal taste preference, and you might very well get results you like when you use chicken.

After reading the recipe, no I don't think that's a successful substitution (for a number of reasons.)

But why not just search one of the food sites for a chicken recipe that sounds good to you and uses ingredients you have on hand?  Seems to me that may work the best for a beginning cook.

I have a couple of chicken recipes already, IT was just that the apple spiced pork chop was tickling my fancy and we didn't have pork chops. But I went grocery shopping for some ingrediants andpicked up some boneless pork chops!

Well I went with a chicken recipe to cook last night apple stuffed chicken with cheddar cheese, but it was bland, and I put ranch on it:)

I still want to know how to make those chicken things I used to get from Market Day, until they changed them and said they were healthier.

Hell if I wanted healthier I would not smoke two packs a day and my weed and beer costs would not exceed most people's rent. They truly screwed them up and after that last box I simply don't want them. However I will start my own thread about it so as not to be a hijacker.

Actually, chicken saltinbocca is very common. The original is veal.

But I would say that the flavor and timing may be different. I do not think a recipie for chicken would necessarily be good with pork as chicken is milder. But experiment. But use timing meant for chicken.

Pork, the way it is raised today, is not much different from chicken as far as calories and fat is concerned. If that is the reason for substituting chicken for pork it's not necessary. Check out these figures comparing the two meats.

YHMA, I have experimented over the years with many different ingredients & I might substitute chicken for pork for beef for whatever, since I really don't follow recipes to the letter.  One of the ways that I have learned to use spices & herbs is to smell the dish as it's cooking & smell the spice/herb & if they seem to blend well, I go with it.  I don't even have measuring spoons, I don't think.  I do have a measuring cup.  I have lots of magazines with recipes & cookbooks & I have always used them as a guide only.  Imagine what the chicken & the ingredients would taste like to determine if it's a good switch.  Cooking is a creative endeavor.  So have fun with it.  If it doesn't turn out the way you like, try something different next time.  Or add something that makes it taste better.  I've also found that my food always tastes better if I cook it slowly at a lower temperature.  That allows the flavors to meld.

And, LaT, I will gladly trade you some Florida seafood ( lobster, shrimp, stone crab claws for some good Iowa donut fed pork. Do you suck the crawdad's heads, LaT ? Can I watch ?

And, kittin, darlin', gator doesn't taste like chicken. It's very mild and tasty. I like to prepare is as thin sliced and, perhaps, pounded medallions, lightly dredged in seasoned flour and quickly sauteed, finished  with a pan sauce of sauteed garlic, capers and the pan deglazed with fresh lemon juice. Yum.

Now I am wondering if I can fit two pork loins in the dry ice cooler I have downstairs and how much the freight would be to over night it. In hopes it would come back full of lobster, shrimp and crab...... and don't forget the conch!!! Mmmmmmmmmmmm. I love love LOVE seafood!!

I've always thought it tasted a little like a cross between catfish and frog legs.  It's tasty.
