You know how sometimes on swings and stuff it'll say weight limit 140 or something. I have to assume they mean one person, because very few people would total 140 with both their weights combined.

That is the weight limit for the item, if it is one person or fifteen cats!

Remember also, that the ITEM has a weight limit, but so does whatever is holding that item UP.  If your framework or wall attachments are not proper, it doesn't matter if the winch will haul up a ton!

When an elevator is rated for 6000 lbs., is that for one person, or all the people combined?

Yup, that is true, the item and the item you're attaching original said item to have to have a good weight limit, or if you're attached to brackets in the wall you will rip them out lol.

Another consideration, YHMA, is that the stated weight load is usually for a static load -- that is, one that is still. Pushing or pulling or bouncing is gonna greatly increase the force being exerted on the structure. FYI.
