There have been numerous studies into various fetishes. Human sexuality is an important field of human behavior, which is an important field in the cognitive sciences, as well as in the field of psychology. The quality of a study will vary, and some have a clear bias, particularly when dealing with fringe sexuality practices that are still strictly taboo. However, there are some very interesting and serious studies out there.
If the existence of research into coprophilia is baffling to you, it might be even more baffling to find that there have been taste comparisons done across cultures and diets. Not sure how many of those have been published in peer reviewed journals (in science, as in culture, there is still a human element to the equation), but there you go.
While I haven't bothered to confirm it myself, some have mentioned NASA conducting tests on sex in zero gravity. It makes perfect sense, as any long distance mission at sublight speeds will have to be based on a generational vessel, where the crew produces offspring that will continue the mission. My guess is the bulk of the tests have been conducted in freefall, not actual zero gravity, but some have probably been done in orbit.
Note, also, that using yourself as the guinea pig is the only way to bypass the need for informed consent and medical ethics in a study, while also being a perfectly legitimate excuse to engage in sexual relations with people you can't plausibly have a real relationship with, so there's plenty of good opportunities to do pilot studies.
