Nobody I know of makes better curds these days. I usually bring back about 10 pounds and freeze most of them, but the texture changes when you freeze them so they're not quite as good. But even then, still better than any other fresh curds I can get in the Cities.

Cheese is right up there with hot sweaty monkey sex as far as Suitable Topics For Everyday Conversation go, IMO. And there is no such thing as too much cheese. (seen on a bumper sticker once: "Have You Tried Cheese Lately? It's made from mammary products!)

There is a little town near here that has a cheese factory. I really need to make a Saturday road trip now. And the bread sounds perfect!
