My daughter & I are going to make an apple-cherry pie from scratch tomorrow and I need a pie filling recipe. We have the crust under control (we already premade that a while ago) and we are cheating on the cherries by using canned (have you seen the price of cherries up here in the near arctic???!!!!). All I need is a good recipe for making apple pie filling from scratch...so i turn to you oh weird & wonderful CMers for help

Well Arpig, no one made better apple pies than my ex-stepmother, lol.  She didn't really make a "filling" per se, like the stuff that comes in cans, she just peeled and sliced the apples (MacIntosh and Rome are best....I think) into thin slices, dumped them in the pie crust shell and smoothed them out with her hands, in layers.  A layer of apples, using about 1/2 of them, sprinkle sugar generously over top, maybe 1/4 to 1/3 cup over the layer, as well as cinnamon.  Cut thin slices of cold butter and dot it around the layer, too, maybe 10-12 slices. It's kind of a "to taste" thing.  Then another layer of apples, the sugar and more cinnamon and the butter dots.  I like a little nutmeg in mine, too.

Then do the top crust as you usually do.

Sorry this isn't more precise, but they never used a recipe and neither did I, but the pie was awesome.  Use your own judgement, if it looks like it needs more sugar or butter, add more.  Also, my stepmom's pie crust was to die for, it literally dissolved in your mouth.  She didn't use Crisco, however,she used pure lard, lol.  Best pie crust ever!  Good luck!

3 cups peeled apples (Delicious, Winesap or Macintosh)
3/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
dash of salt
1 cup heavy cream Preheat oven to 450F.Bake pie shell 8 minutes. Reduce temperature to 350F.Combine apples, sugar, cinnamon, nutmeg, salt and cream in a bowl and mix well. Pour the apple mixture into the baked pie shell.Bake for 1 hour. if crust starts to get to dark cover in aluminum foil around edges..

I recommend The Pioneer Woman.  Here is a link to her apple pie recipe.  I made it for Thanksgiving (without the nuts as I don't care for them) and got rave reviews.  I have one in the oven as we speak.

Which kind Tim?     We have Ranier and Queen Victoria, but for some reason I have had bad luck with Bing...not sure why.

Lisa,

Several, a few of each--Ranier, Stella, Black Tartarian, Bing, Van, something else staring with L, another starting with K (I'd have to go out and look....I forget).

Mainly I fight Japanese Beetles for them--they like to defoliate them.

By the way--I just lost all of my winter broccoli (in the greenhouse) to critters--I suspect rabbits.

Damn.

MM, how do rabits get into your greenhouse? and, since they are there anyway, can you trap them, and have rabbit stew? and hausenpheffer? and fried rabbit (which is very good for breakfast)? Wow, I miss rabbit. will someone go hunt me a rabbit, please?

Aprig, by the by, when I was in charge of Thanksgiving, back when my kids where still kids, I had a hobby of collecting 'mock' recipies. I was very fond of mock apple pie, wich is made of soda crackers (it tastes better than it sounds). Using real apples, however, I discovered that an apple-mock cherry pie that was very good, using crainins, and some nice red colored apple juice, like apple-cran. it tasted a lot like apple cherry, and was quite yummy.

I don't know how they get in--squeeze under, I suppose. If not rabbits, then rats or squirrels--the stalks were gnawed off about a foot from the ground (a plastic 2 liter bottle cut off nine inches about the ground and buried a bit still surrounds each plant from when they were started).

You are welcome to come here and hunt them.

As usual, I'm a little late, but for my apple pies, I just cut up apples, then mix them in cinnamon, sugar and applesauce.....I'll add nutmeg too....and once I tried a half a can of jellied cranberry sauce...that was GOOOOD!  I mix them all up and dump it into a pie crust and toss it in the oven.  I cut my apples into a bit bigger chunks to make sure they don't cook down too much.....but it comes out nice and tasty!
