From years of experience with riding and training Thoroughbred horses, I know that when a horse is new to the bit and bridle, he or she tends to have a very 'soft' mouth.  This means that the mouth is much like a human's lips; soft, pliable, and easy to rip or bruise with too much pressure.

Over a short amount of time, though, the mouth 'hardens' and forms calluses, letting the horse withstand more intense and frequent pressures from the bit.  Some horses' mouths get so hard that bits become almost useless, leading to using stronger or harsher bits or even alternate forms of steering.

Out of curiosity, is there any long term effect on humans such as this who participate in regular gagplay or ponyplay?  If so, how does this effect how enjoyable the play is?  Does it lead to discontent with smaller to average gags or bits?  Does it hurt the mouth or affect the teeth, such as thumbsucking can do?

I'd also like to hear more about this and would suggest that you consider posting something in the general section (it tends to get a lot more views). My current sub has a tendency to bite her own lips or even manages to get little tears in the corners of her mouth when wearing a bit, ring or ball gag. She hasn't ended up with any permanent damage or calluses but that may be because I've switched to plug gags to avoid the problems she was having with the other kinds. It really takes the fun out of things if she starts drooling blood.....

Unlike the horses, I don't wear a metal bit. A lot of time he just shoves cloth into my mouth, panties, scarf. Bought bits are rubber or silicon. These yield to my pressure on them, instead of the other way around. Meaning when I bite down, they flatten some. I suppose if you wore a metal ring gag all the time you would have problems but maybe not, after all unlike a new rider yanking on the reins there is no added pressure here. He isn't pulling on the strap making it harder to wear.

Anyway, no hardening of the mouth here. Oh and to avoid tears in the corner, which I find are from existing chapped lips I apply chapstick or a little crisco to my lips before we start.
