So I tore myself away from the legend of Robert the ignorant masochist thread to eat lunch.

I wrote this thread because I know what a bunch of foodies you guys are. Everhope whipped up some soup & cornbread for lunch. No magic in that unless of course ou consider the soup was MEATLOAF SOUP !

wtf is meatloaf soup you ask? Fuck if I know. There was beans, carrots and a bunch of other veggies with meatloaf. It was awesome. I never heard of meatloaf soup before. Any questions, ask her. I have no idea exactly what was in it.

Leftover Meatloaf Soup Recipe
Ingredients
  • 1 pinch salt & pepper, to taste .
  • 1 large carrot, sliced .
  • 2 garlic cloves, minced .
  • 1 (26 oz) can sliced tomatoes .
  • 1 onion, sliced .
  • 1/2 basic meat loaf, sliced (left over) .
  • 1 potato, sliced .
  • 1/4 c alphabet pasta (or any other small noodles) .
  • 2 c baby spinach leaves (optional) .
  • 2-3 c frozen vegetables (peas, corn & green beans) .
  • 2 quarts beef broth .
  • 1/4 c pearl barley (more if you like it thick)

Directions
  • Step #1 Sauté onions & garlic in a small amount of oil.
  • Step #2 Add carrots & potatoes, & cook for another min.
  • Step #3 Pour in tomatoes (I used to pre-seasoned kind) & allow to simmer for 5 mins.
  • Step #4 Add stock & bring to a boil.
  • Step #5 Add frozen vegetables, barley & pasta, & meatloaf.
  • Step #6 Return the pot to a boil, cover & let simmer for 20 mins or until barley is tender.
  • Step #7 Toss in a few handfuls of baby spinach leaves (optional).
  • Step #8 Add salt & pepper to taste.
  • Enjoy the Leftover Meatloaf Soup recipe

Talk to twenty different cooks and you will get twenty different recipes. Most call for a tomato base, but i always use beef broth. And rice instead of pasta. Those of us that use rice call it Porcupine Soup.

I don't know how she did it but, there was a perfectly firm piece of meatloaf in the middle of the bowl.
