chicken, lemon and olive tagine over couscous,,,,,,the real thing not that instant boxed blechy stuff.

** Just a note. In the countries where couscous is consumed regularly, to add anything to it other than salt and the good oil used for raking it is unheard of. Occasionally milk is used but that is it. Every time I see a flavored couscous I want to rip it off the shelves or menus! Authenticity before convenience is a mandate when cooking ethnic cuisines of any type. Just because you put tomato and basil in something doesn't necessarily make it Italian food so why should that not hold true for other cultural groups?

EG ~  Does this mean I have to stop cooking my couscous with chicken broth?  Cause I think that it is rather tasty that way.

Aylee couscous is actually steamed on top of the stew/mixture/topper which is cooking in the pot under it so it takes on flavor from that. Cook it however you like it but just know that you are doing it unauthentically. If you like it do it though I know that I have been the person to even bring the idea of chicken stock, stock use at all even as a base for soups, to Morocco. Still, we don't really need to be using it for our foods (Moroccan) but I need to when I want to cook something western. If you're using instant couscous, and this is for anyone, then you have no idea how couscous actually tastes. What I find really odd though is that on rare occasions a large Knorr bouillon type cube will be used, very rarely, but stock use in cooking just isn't done. The Knorr is never used to make couscous though. Very flavorful bases happen while the food is cooked which isn't often achieved in regular western cooking. I also have to add that I have found most all foods in the countries where I have lived have a deeper flavor than those of the US. Morocco is just way out there as far as our food tasting exceptional all on it's own before cooking though the meats I can only vouch for in their cooked state, then it is richer and more flavorful that I could get in the US.

Yes to the garlic and baguette. 
EG  I know what you mean about un authentic foods.  It is very difficult to get authentic ethnic and/or cultural cuisine outside of their respective regions.  I'm just glad I live near NYC so I can usually find exactly what I want.

Hiya oreo,

I live right now in a small town in Maine and have no problems finding anything I need to prepare authentic Moroccan or really any other ethnic cuisine at my local supermarket. We also have a fairly lagre amount per capita of ethnic markets though I prefer to get everything in one place at the supermarket. I just don't have the time or inclination to drive half a day when I can get it all there.
