I only had duck once and it tasted like pork as it was way over cooked..but i have eaten wild turkey before, pheasant and chuckar which is like quail i think and yummy......but i would try duck agian as I know now it has to be rare if it is the breast part at least and not a duck confit......

How about Chile Rellenos stuffed with cheese?

ughhh..something hot next to something cool..probably the first time on here i said no...sorry...love both separately...but swordfish is one of my least favorite fish....but did just read the curried part...that might make up for it...LOL

I ate an odd fish once though that on the menu that  went by the name of "skate" which is really stingray and they have to take a lot of bones out.......it was quite delicate in flavor but not my favorite...would you eat it????? I think it is just the fin area that is served.....

(Skate "Wings" are the edible part)  No i've never had Skate, nor do i want to.
 
How about Mediterranean Watermelon Salad
(Watermelon, Feta cheese, Olives, Arugla, dill, mint, honey and olive oil )

Curious...are you talking about Buffalo meat pot pie or the dung patty?
 
"Buffalo meat is lower in fat than beef; therefore, it cooks faster than beef and can become dry if over cooked. That's why it's important to always remember "Low and slow is the way to go!" As a general rule, buffalo should be cooked about 50 degrees lower than beef, but for the same amount of time. Also, buffalo meat is best when cooked from rare to medium. Never cook directly in a flame."

The serving suggestion of Honeycomb, Pears and Goat Cheese sounds interesting.
 
Fire Roasted Corn Salsa (tomatoes, corn, onion, jalapeƱo, cilantro, garlic, lime juice, cumin, salt & coarsely ground pepper. The tomatoes and corn are grilled over high heat.)
