We use them all the time for roasts- chicken and pork.   We bought a new one and have to watch it- for some reason it is much faster then the old one.

I just so happen to be making minestrone soup in my crock pot this morning. I use chicken broth as a base, but you could easily substitute vegetable broth or water.

4 cups liquid (meat broth, veggie broth, or water)
1 cup mixed dry beans, soaked for 1-4 hours in water & baking soda
Chopped:
onion
celery
peppers
carrots
garlic
Plus any other fresh veg you want to toss in there: broccoli, zuchini, squash, radicchio, cabbage (not too much), tomatoes, spinach, green beans, corn, etc.

(I tend to use this recipe when I have vegetables that are less than perfectly fresh and need cooked, it will pretty much accommodate any variation you please.)

(1) 8 oz can tomato sauce

Spices you can add beyond salt & pepper:

bay leaf
basil
parsley
marjoram
rosemary
thyme
tarragon
all spice, clove a/o cinnamon (tiny amout)
red pepper flakes

or go mex with cumin, cayenne, and cilantro

The man is not always happy about vegetarian meals, so I have a left over(cooked)  hot Italian sausage I will slice up and add to his if he balks.

Meat eaters can easily add ground beef, stew meat, chicken (raw or cooked, but if cooked, last 15 mins), just about any kind of sausage. Any combination of the above works well, too...so this is a great "let's see what we have in the fridge that needs cooked" soup.

Make a big pot of soup beans in the crock pot. When you get home, a pan of cornbread is in order. (White corn meal and no sugar dammit). Chop onions on top, You can eat on that for days.

Stir the liquid and BBQ sauce together, add to the pot, add meat. Cook for 6-8 hours on low until meat is falling apart. You can serve this as sandwiches, or over rice/potatoes, however you choose.



That looks like a sodium attack!

Sometimes I forget what people have to do to meat from other areas to give it flavour.

One of our fav meals is a nice chuck roast with onions, garlic, basil, parsley, red wine, wee bit of sea salt and some black pepper,carrots and potatoes......in the crock pot or my cast iron pot in the oven.

Sometimes I will just put in a big hunk of cheap beef, sprinkled with the above seasonings and let it cook until it is falling apart. Make some home made egg noodles and mix. Beef and noodles is..........OMG good.

I don't use my crock pots all that much. I prefer my big old cast iron pots on low heat in the oven or in the coals of a fire outside.

Peaches in Butterscotch Sauce

You can serve this with whipped topping or ice cream:

1 lb of frozen unsweetened sliced peaches
2 teaspoon of lemon juice
1/3 cup of splenda
2 tablespoons of honey
1/2 teaspoon of blackstrap molasses
2 tablespoons of heavy cream
1/4 teaspoon of cinnamon
2 tablespoons of melted butter
Guar or xanthum

put frozen peaches in slow cooker.  in a bowl, stir together lemon juice, splenda, honey, molasses, cream, cinnamon, and butter.  Pour mixture over peaches.  Cover and set to low and let it cook for 6 hours.  Thicken the sauce to a creamy consistency with a littl guar or xanthan and serve hot.

As winter is approaching and ya might have a nice little snow fight with several people and want something warm to come into:

Hot cinnamon Mocha
1/2 gallon chocolate flavored milk
2 cinnamon sticks
2 tablespoons of instant coffee granules
1.5 teaspoons vanilla abstract

Combine everything in slow cooker and give it a stir.  Cover and set to high and let it cook for 3 hours, turn to low and serve from the slow cooker.

As always, you can always add your favorite liquor on the side for spiking and of course whipped cream.
