The most important thing to remember when roasting a goose or a duck is there is a TON of fat between the skin and the meat. I either use a rotisserie on the gas grill with a pan to catch the drippings or I use 4 S Hooks and hang the critter from the top rack of the oven with a pan below on the bottom rack to catch the drippings (Suspension bondage cookery anyone?).

If you cook either like a turkey or roaster chicken in a pan, you run the risk of having a really greasy meal.

Goose fat is the best thing to cook roasties with!!!

Good luck hanners. I hope it comes out delicious. Another good thing about cooking it that way is all the skin comes out nice n crisp.

No baking involved. Just roll and leave overnight to dry out, then store in a container of your choice.

i've gotta stop watching Bourdaine. i'm dying for a ham or pork/crackling for thanksgiving/christmas. i looked at legs though, and they're about $40 for a regular sized leg. sigh.

Yes...lol. I try not to overdo the rum as the grandies eat them.

NS, What, are you jealous ?

Everyone, now what to I need to make these fucking htings ? I can dig meat, potatoes and who knows, onion, carrot, who fucking cares. But the crust, that is like a pie crust right ? What then, flour and lard ? I won't use Crisco.

The thing sounds like it's like a calzone, which is probably one of those weird things that only are known here, on the edge of the universe. Don't push me too hard I might fall off.
