Ok, I made pizza dough today following these directions (with quite a bit longer rise time) It turned out pretty well, but I'm still looking for the perfect pizza dough. (it was a pleasure to work with though!)

(it was a pleasure to work with though!) I find that to get things to rise in a reasonable amount of time, it helps if I preheat the oven to 100 and then turn it off. The oven will stay warm for quite some time and it rises faster in warmer temperatures.
