I am in the soapy category but I can tolerate it in small amounts in some recipes. I have read that not all varieties taste the same and if you crush it (as in a pesto) there are enzymes that are released that make it less soapy.

I LOVE it!! I try to use it as often as I can. Mostly while making mexican dishes or scallops. It has this nice clean distinct taste to me. I typically mince it it though so that may change the taste.

Lived in Mexico. I love cilantro. Tastes like fragrant Latin passion to me. . . . it’s 3 am in Tijuana. You have a nice senorita with you and you're hungry. You take her out for some tacos & cerveza. The warm night air embraces you. The cool cerveza has your head buzzing. You eat another cilantro topped taco. She touches you with her long leg, deliberately enticing you. You grab her arm and start walking back to the car. You can still smell the cooking from the diner when you pause and press her against the cool concrete wall, then you pull her close and take her kisses. And yes, I can smell the cilantro on her warm breath and taste it on her lips. Love the stuff.
