Mmm not just any sausage ... 'gator sausage ... hard to find but worth the effort of locating.
 
I do my greens with smoked turkey, scallions, some spices, and a big ol wooden spoon to smack the paws of those who " ... are just testing 'em mom!"  
 
And fluffy cornbread with honey butter

You know, bandit, you and I have had our differences, but I gotta agree with you on Heaven on Seven (and on Rush, too).  The best gumbo north of New Orleans, and better than all but a few down there. 

My two favorite resturants in Chicago:  Heaven on Seven, and Wishbone.  mmmmmmm!

LEVEL:  It is the real deal.  The chefs at Heaven on Seven trained with the best New Orleans has to offer.  If we blindfold you and you taste their gumbo, you will think you are in the Big Easy...Gawrawnteed!

oh, and bandit, I am pretty sure that the Dixie Kitchen in Hyde Park closed. *sigh*  It was a contender.

I am totally with Level on this one...a good true gumbo does not need tomatoes.  I dont like them cooked anyways....unless they are green....then....comes the fried green tomatoes which I love.

Boiled Okra...ICKY POO, can we say "SACK OF SPIT"  Now fry me up some Okra and give me a big bowl with a Pitcher of sweet red kool-aid and we are talking a meal fit for a QUEEN.  Don't need nuthin else.

Heh heh, I believe ya'll. Is it a brown gravy or white? And maybe someday, I will get to visit you good folks, it'd be a pleasure.


I do both but for the fried chicken it is a white cream(real cream)and chicken stock (simmered with  thyme, sage and rosemary from my garden)gravy made in the pan i fried the chicken in once the oil but not all the crisp brown bits have been removed.

Say when i'll even bake a pie.
