It's been a while since I lived in Queensland, but there used to be a place called Inta Leather in South Brisbane. I've never been there and can't comment on the quality of their products but I know they had a fairly good rep. As Nyckname suggested you could try getting an ordinary seamstress to have a go, but as an amateur sewer myself I don't think it's as straightforward as he makes it sound. I'd try to find one with some experience in sewing leather. Choosing the right kind of leather/pattern combination is only the start. She's also need to make up a 'muslin' to check the fit because, as mentioned, you can't rip and sew again. It could get quite expensive. Good luck.
