I am making a chicken breast stuffed with cheddar and pepper jack cheeses and jalopena(sp?) peppers. I am having a chicken rice with pepper jack cheese melted in it, and with green beans almondine. The whole thing smothered in a homemade chicken gravey. I love having a night off.

What you having for dinner?

A low carb ice cream bar and a glass of wine. And if there is any left, probably some pepperoni slices.

popcorn, sugar free fudgesicles and a microwaved enchilada. I'm writing a grant and I'm cranky!

I ate in the dining hall and had yogurt currey chicken, mashed garlic red skinned potatoes, green beans with onions (maybe they were minions?) and chashews, and a dinner roll. For dessert I had angel food cake with chocolate chip cookie dough ice cream.

I am now hungry again and am making bagel pizzas and a salad (I have to eat at least 5 full meals a day, otherwise I might starve )

I grilled a nice steak, med. rare, with lots of garlic. And had the other half of a rather large baked potato, (cooked the other night) with butter, cheddar cheese and sprinkled with bacon. With a glass of chocolate milk. It was my splurge night.

Tonight I will be back to grilled chicken and salad.

Take care,

Does cereal and low fat milk count as supper?
