Couple of possible meanings. "Service oriented sub" would differentiate them from a "do me" sub. In other words, they're more interested in serving you than having you serve whatever kinky thoughts they have running around in their head. "Service sub" is also sometimes used to indicate that the sub isn't used for sex. They more or less act like a servant or domestic.

my service sub?

Clean house, wash dishes, put away the toys when we're done with a session, drive me around, and bend over when told. Those are the basics anyways.

Here are the main types:

Service sub is fulfilled by being useful and providing services to the dominant

Control sub is fulfilled by having their actions directly controlled and manipulated

Obedience sub is fulfilled by having their lives structured and are fairly passive without specific instruction (there IS a line between being controlled and being obedient)

Pleasure sub is fulfilled by seeking out things to please the other person and focuses on those things

A sub can be any one or combination. I'm mostly a combination of service/control.

and, of course, there's also the romance sub, who needs a more traditional 1-1 romantic involvement in order to feel fulfilled.
In answer to the OP, I think most understand a service submissive to be one whose main motivation for submitting to the gratification of serving another, although the specifics of that service can vary wildly from case to case. A service submissive may serve sexually, for instance, but however much pleasure she receives from the sexual activity, her primary gratification within the relationship comes from fulfilling a need to serve.

There are probably as many variations on "service sub" as there are Dominants who have them....

However, for Me, my service subs provide a variety of household and domestic chores, *without* any expectations of having their kinks fulfilled. I do sometimes "play" with my regular subs, as a reward for particularly good service and loyalty, but that is up to Me to decide how, when and what I might reward them with...

My service subs may also act as escorts to local Fetish or BDSM events, and even serve tea at my Mistress Tea Parties. (If you'd like a more detailed list, you could always have a look at my CollarMe profile, which details many of My expectations that I require in a service sub.)
