I think You've gotten the answer about the health risks, but few are discussing the emotional one.
I think that's not something that can be discussed in a general way.
Just like some subs can do rape role play and others it would cause emotional harm so is biting.
Me personally, it's intense enough I hate the sensation from biting or pinching, but I love the submission of it all.
I bruise horribly easy and have carried a sore bicep for 2 weeks behind a bite for the most extreme it's affected me.
Usually it's a bruise that lasts about a week.
I've not allowed or desired having my skin broken as I think blood rites are sacred spiritual journeys not to be entered into with casual friends and have not had a partner that wanted to explore it yet.
Someone else having my life force in their mouth is something I reserve for my owner if I have one and he's into it.
I do do needle play, but that's not mainly for the blood of it, nor is the other person's skin contacting my blood, no my blood in their mouth, and no scars behind it.
I think depending on you and the other person being on the same page and being sure both are wanting to participate will be the way to do the most you can do to not to cause psychological damage.
Since it seems your subs are begging and craving this I'd say if you're very closely committed in your relationships this should not cause them them distress or mental harm, but rather give them the release they long for.
I'd ask you how will you feel with your sub's blood in your mouth and the bonding in blood pact rites with them.
If you think it can be emotionally healthy for you than based on what you've shared about your subs it should be good and healthy mentally for all.
Just be sure the subs know what about being bitten feeds them and how that gives them what they need out of it.
If you feel their knowledge of their selves and motivations are healthy and acceptable and they desire it, it should not cause emotional damage.
