I think Linea should come back to Florida too.  If I could find a job there, I'd be there in a hot second.  I've been looking too.  Fargo, ND supposedly has jobs.  Been looking into that too.  My sister really cracked me up when I told her about Fargo.  She told me that I didn't want to move there because it was too cold.  She doesn't seem to grasp that when one is unemployed & flat-assed broke, one goes wherever the job is!!!

I love to put cold mashed taters into some butter in a cast iron skillet & brown them nicely & put fried eggs on top.  YUMMMMMM!!!!!

I'd make Shepherd's Pie except that I used all 4 pounds of hamburger we had in the freezer to make the meatloaf last night.....

(That sounds yummy right now.... but then, so does your meal, Greedy!)

FOUR pounds of hamburger for a meatloaf???  Good Lord, how big was it??  I don't think i've used more than 1 lb plus 1/2 lb pork sausage ever.  And I always have enough left over for sammies for the next few days.  Did you put anything else in it?  I always stretch mine with oatmeal & eggs.

I second Linea's question . . .

I always thought that you made meatloaf in order to streatch how far your meat would go. 

And what size of pan did you have to use?  I use a pound of groundbeaf, and it completely fills up a bread loaf pan.

Nah, you make meatloaf cuz it tastes good and makes some kickass sammies the next day.  I use half ground beef and half ground pork with breadcrumbs, onion and tomato sauce or paste.  Yummy!

I use all ground beef, bread crumbs (not oatmeal), Spike seasoning, a few eggs, ketchup in it then cover it with ketchup before baking. I was never told there was an actual "recipe", you just threw things in the bowl and mixed them up.  I kind of go with the flow when making it.

Nah, there's no real recipe for my meatloaf, nor for much of anything else that I cook.  I have cookbooks, but I just use them for ideas.  No measuring spoons here.  When asked what a dish I have cooked is called, I generally say, "I don't know."  That became the name of a sort of sub-class of dinners that I make.  Chelsea often would ask for I Don't Know for dinner & I would throw one together.

However, there is never ever any tomato substances in my meatloaf.  Iffen ya wants the ketchup, ya gots to put it on after.  And ya gotta bring it with you, since I don't have any in the house.
