I often address doms who have e-mailed me with a capital "You" if I deem that they are worthy of being addressed in upper-case. :) But as a former English teacher, I can't *not* capitalize my "I's." I just can't do it. So, for me, standard English also (mostly) applies. I also don't like reading slash-speak and posts or e-mails in third person. Of course, if your domme requires it, then you must follow her rules. If she has no preference, I'd just use standard English. As for telling who is sub vs. dom, sometimes you can tell by their names (such as mine), but otherwise, checking profiles is the only way to know for sure.
