Well two problems with attempting to eat black marlin, one, while they are a great game fish, they are lousy eating, and two, under international law, they are protected, and Australia has gone so far as to extend their fishing regulations out to 300 miles along the area they are found in their waters to keep Japanese long liners from even accidentally hooking them.
Now if you want a good fight with a damn good meal at the end, I suggest going after wahoo, Mahi Mahi, black fin shark, yellow jack tuna (for a small variety of tuna, these bastards put up a fucking hell of a big fight.)
I have hooked all of these when living on Key West and ended up with extended fights with them on the hook. One thing that all of these seem to have in common is that when hooked on a rod and reel, win the run they tend to dive. I have seen a wahoo take all but the last few feet of line off a reel in their first run after being hooked.
Black fin tend to go deep and then double back under the boat, Mahi Mahi are jumpers and their tendency is to jump then go deep, and yellow jack are just a freaking pain in the ass because they try to use every square foot of every ocean when you hook them.
The main problem with the black tip is that they like to hang in deep channels ocean side of reefs, and when you hook them, they run for the coral, or wrecks.
If you want a real challenge, go fishing for gray reef sharks in the keys, for one, you have to fish from a small boat or kayak, and two, while not known as man eaters, they are known to bite humans, especially the ones that happen to hook one from a kayak that they manage to dump. If you get bit by one of these critters, figure an average of 20 to 30 stitches, rarely do they amputate a limb.
Of course, the giant grouper are good eating, good fighting and fun to hook.
