applesauce works really really well for a sugar substitute. :)  More fruits/veggies in them that way too.

Here are some names of cookies (my recipe book gives both metric and regular amounts) -
Carrot Orange Cookies with Orange Drizzle Icing.
Carrot Cake Cookies with Cream Cheese Frosting.
Carrot Bran Cookies.
Zucchini Raisin Cookies.
Frosted Zucchini Bars.
Carrot-Date Bars.
 
You might also try any cookie that has chopped apple and substitute grated carrot or zucchini -
Apple Crunch Cookies.
Apple Raisin Cookies.

That is another thought.  Thanks!  (BTW, I do have a vegetarian cook book if you need a couple zucchini recipes.)

No they are not!  I take it that you have never had mashed turnips added to your mashed potatoes?  Or have never had them in one of my wonderful stews?

Amen!  Every christmas I put parsnips and turnips in the mashed potatoes, they get destroyed fast by everyone. :) 

I really ought to look at more veggie dishes... problem being, everyone in the household is nearly carnivorous.  Although, they love when I put zucchini on the grill, or eggplant, or tomatoes. :)

Here's another idea -
i just found a recipe that suggests substituting shredded Zucchini for Pumpkin in Pumpkin Bars.  Shredded Carrot might also work in Pumpkin recipies.

shredded carrot works awesome as a substitute for things like pumpkin bars. :)  Also, for a sweet liquid, somewhat of a "sugar" substitute, carrot juice.  It's like liquid candy... soooooo tasty.  Damnit, now I want some!

Wow!  Lots of great ideas! 

And yes, carrot juice is tasty.  Butterhead's only juice that she will drink is apple-carrot.    Now. . .if I could only get her to eat apples and carrots with OUT them being a juice.  LOL

you guys have come up with a lot of tasty sounding vegetable snacks - but I think you missed this one.

Chocolate Carrot Zuchinni Cake/Muffins (with or without raisins). Make them as muffins and they freeze really well. I hate zuchinni - but I willingly eat this!

As far as label reading goes ladies - you will get the handle on it really fast. I've been reading labels for 3 years now for the Princess of Diabetes - and now I just know the standards things to buy. When I'm looking for something unusual I go back to reading. You will both do fine!

That's what I'm expecting, Beerbug.....but GETTING to that point is frustrating, especially when Lumus doesn't appreciate the time involved. 

So if holly pops back in, she has cmail.... for that matter, so does Fluffy with all that talk of fabulous recipes.

1.  Have him do it himself.
2.  BOTH of you go to the store togeather and do this. 

Seriously, he needs to be able to read and understand the lables and nutritional information as well.  There may come a time where he has to do it himself, for whatever reason. 

Learning new dietary requirements takes time and energy, just like anything else worth learning and doing well.

yeah...i have never been a zucchini fan, not matter how it is prepared. And i can eat plain boiled carrots all day long. So good!

That's a GREAT idea, Holly.  That would stretch the meat and be great for someone trying to watch their fats, too.

Erm.....I thought the point was he'd also educate himself by having the patience to see exactly what is involved to food shopping for special diets?  After all....he did father the child....just saying yanno.

*nods* this was something i picked up on in my college days, Fluffy. Typical kids...we had a serious cash shortage and started using shredded potatoes to make the meat go farther. The problem was, despite how moist and yummy, it was an additional starch that we did not need, so someone suggested carrots.

What we did was to chop a huge amt (we had to borrow a food processor and tried to make the most of it) and freeze them by cupful's in baggies. And we did use baggies (the cheap ones) then put all the baggies in a large freezer bag. I have found individual freezer bags are not necessary alot of the time.

Actually, I use applesauce as a replacement for the oils or margarines in food.  Leaves everything really moist, and you'd never know the difference.  Not a big fan of zucchini or carrots being used in recipies, even tho I know they cook down and can't be tasted.  As far as sugar goes, I'm using Splenda right now....it measures cup for cup in baking, and all those nay-sayers that have said they'd know the difference....DIDN'T!  HA!!!!
