That is the one thing that I am incapable of doing.

However. . . did I tell you that the Carrot, coconut, Pecan cookies were VUNDEBAR!!!!!!!!!!!!!!!!

And they have completely disappeared!

It cannot possibly be bad! 

Actually, I think that carrot cake COULD be made better if they would stop putting icing on the sides!  Yelch!

Yep yep yep!

Actually. . . my mother is going to make ME a carrot cake with NO side icing for christmas when we come and visit.  Just a wee bit between the layers and a wee bit on top!   

If you want to drop by their place, I will be happy to share my cake!

How could we not?  They're from our Fluffykins. :)  *HUG*

And that reminds me of when I was a kid Aylee.  My grandma used to bake me a lemon meringue pie for my birthday.  And it was mine all mine.  Anyone else tried to get any, they'd get grandma smacking their hand with a wooden spoon.  And for christmas, it was a peach rhubarb pie.  I miss grandma's pies..

Lemon Merengue is my dad's favorite, so I always thought it was SUPPOSED to be served on T-day, and christmas, and all the other holidays.  I even know how to make it extra tart!  YUM!

OK, all your experts.  My meatloaf crumbled.
 
i made a meatloaf of 1 1/2 pounds of 93% lean ground turkey and 1 pound of 92% lean ground beef.  1 cup of uncooked brown rice, can of diced tomatoes with all the liquid, and 3 eggs.  The veggies were 1 cup mushrooms, 1 cup shredded carrot, 1/2 cup diced green bell peppers, 1/2 cup diced red bell peppers, 1/2 cup diced onions, 3 cloves minced garlic, and 1/2 cup sliced celery with leaves .  It was seasoned with Mrs. Dash original.  i cooked the veggies a little in a skillet before mixing them into the meat.
 
Even after being in the refrigerator overnight it still fell apart.
 
Was the meat too lean?
Not enough eggs?
Too much rice?
Too many veggies?
Too much of each veggie?
Over cook it?  i tried to cook it to internal temperature 160F but it actually went higher.

Crumbled meatloaf isn't that bad.
 
It can be a meat & veggie soup mixed into beef broth.
It can be a meat & veggie sauce mixed into tomato sauce to put over pasta.
 
What else can i do with it?

Ravioli or pierogi filling?

Or you could just purposefully crumble the next one for those things or chop it up.  Much like cookies, if it breaks, the calories fall out!

Okay, I just posted this in another christmas thread, but I'll pop it in here too, verbatim.  :)

You know... I think here in about 30 minutes... 430ish mountain I'm going to hop online and stream some xmas musics.  Not the normal stuff though, some fun, alternative stuff that most people probably haven't heard before.  I'll even end it up after about 9 hours with the audio from How The Grinch Stole Christmas (the animated version).  My stream address is in my journal, so, yeah... grab that and give a listen if y'all want.
