I do a thumper dish you'd slap your own mama for. You slow cook them in onions, garlic, salt peper till tender but not falling off the bone. take it out, let it cool.... dip the peices in flour, then egg wash, then in bread crumbs mixed with parm shredded cheese and some herbs like thyme, and rosemarry (fresh) then you deep fry the bastages. It is so succulent and yummy. Tender on the inside, crispy on the outside. Damn it.. now I want some. Gwyn
