so...we're doing our Christmas dinner together, me and the kids. i've got an 8 lbs standing rib roast in the oven. my son who eats like a horse wanted tons of potatoes. i mashed 15 lbs of potatoes, added 2 lbs of crispy diced bacon, 2 bunches of green onions, l lb. butter, 1 lb. sour cream, 1 lb. shredded sharp cheddar and 2 heads of baked garlic cloves. they tasted them (and holy sheeeit are they good!), but the cuties are back at the store for more bacon...gotta love em. [8\|] -moo

Christine, except for doing them mashed and not restuffed into their skins, that's how I do holiday potatoes. But I usually don't add the bacon. They're rich enough without it. I have done fried pancetta and scallions as an addition though.
