"The potato has potential as an antidote to hunger caused by higher food prices, a population that is growing by one billion people each decade, climbing costs for fertilizer and diesel, and more cropland being sown for biofuel production.

To focus attention on this, the United Nations named 2008 the International Year of the Potato, calling the vegetable a "hidden treasure."

Governments are also turning to the tuber. Peru's leaders, frustrated by a doubling of wheat prices in the past year, have started a program encouraging bakers to use potato flour to make bread. Potato bread is being given to school children, prisoners and the military, in the hope the trend will catch on."

Be careful though.

The potato bread you make is usually far more potent than that which you can buy on a street corner and so you may end up hospitalised if you eat too much in one go, before you are used to it.

Potatoe bread is readily available in most supermarkets.  You can also find it at health food stores.  If you want to try baking it, check out the bakery supplies.  Potatoe pancakes are yummy.

I go for the "everything in moderation" approach.  Diet fads will come and go but the need to eat, exercise and live well will always be with us.

Texture wise it is a bit like wonderbread in its softness, but it has a lovely golden color and a delicate taste. It doesn't taste like a baked potato or anything like that, it tastes like bread.Little fiber in the brands I've had, but yummy taste. Aunt Millies makes a good one. So does Koepplinger (sp).

The recipe linked to above has potatoes used as part of a regular wheat flour loaf. The article discusses a potato flour approach. Is there a difference?

Duh. Had a blonde moment.

Whoa... just read the BBC recipe. Seems easy enough, but man! Does it sound stodgy (and delicious). Definitely winter comfort food  .

Or make a fried egg sandwich.  Over medium so you still have some yolk.  Butter the bread...don't toast it.
There is something that tastes so rich when you eat it. 

I'm generally a simple eater so it may or may not taste rich to everyone.  Potato bread is good though.
Just not for everyday eating for me.

i've never had homemade potato bread, but the kind from the grocery store bakery is always good!

Potato starch is a common ingredient in Passover cakes. Although I prefer matzo cake meal myself. I just don't find the texture of a potato starch sponge cake to be quite right. You buy the starch in the kosher section.

Increased demand for potatoes will lead to increased prices.

When are people going to learn?

Not that I'm against it, but potatoes are not exactly a new thing or miracle cure here.
