When I make pancakes for the kids on the weekends, I always cook all the batter. Let the uneaten pancakes cool thoroughly, layer them with waxed paper in between, and put them in a ziploc FREEZER bag (they're thicker than regular ziploc STORAGE bags), and make sure you get all the air out. They will stay nicely for at least a week in the freezer. The trick to reheating them is to spread them with a light coating of butter, spread them out on a plate, and nuke them for just a few seconds at a time, until they are hot all the way thru. I always give the kids some protein to offset all the carbs and sugar in the cakes and syrup, although they often spread them with peanut butter. Cali
