Status: offline 		I'm newish to baking holly. I've been cooking for many many many years. And I knew better than to dump the egg in.. it was a big fat duh moment, sheesh! And I'm talking the make everything from scratch kind of cooking. Yesh!

Status: offline 		Well, CD.  I learned a new skill this weekend...replacing the headlights on Sunshine...my scooter.....did a pretty fine job of it myself is I say so!  (Just did, so there!)

Tiger...don't sweat it....I'm a great, wonderful, almost expert cook.....and I can't do fried chicken either......it always comes out greasy and soggy.......but my chococlate chocolate chip cookies or my french silk pie are to DIE FOR!!!!!!  And my chicken wings....mmmmmmmm....and my chili.....will talk to you for days if that's what you so desire.......my meatloaf is as good as any mom's, my spaghetti sauce rivals any italian's!  So there!

edited...yes I can spell, just can't type!

Status: offline 		Tiger..on a side note....once you actually cook a recipe, how often do you follow it exactly after that?  I'm a "dash of this, splash of that" kind of cook and baker.....do you find yourself modifying the recipes?  One good tip for baking....in order to cut down on the fat content without losing any taste, try unsweetened applesauce in the exact amount as the oil in a recipe.  I only replace it when it's a large amount tho, tea-and tablespoons of oil is fine.  But it gives a great taste and moistness to cookies, especially oatmeal raisin.  Used in a chocolate recipe, there is no taste of the applesauce at all.  But it won't work for everything, you just have to give it a whirl....but it's to replace liquid oil only, NOT the shortening or butter.

Status: offline 		Hell S2S I don't follow a recipe exactly from the start. Really I just use recipes for ideas, then do my own thing. Almost all my real experience is in stove top or roasting though. I've stayed away from batters and such so far. Oh yeah and pasta sauce from scratch, that's fun! Still pissed I can't try making biscuits yet. We're a bit stretched here so only the staples for cooking are around and about. *grumble*

Status: offline 		apricot chicken: chicken pieces, apricot nectar, sachet of dry french onion soup. stir together apricot nectar and soup, pour over chicken pieces. cook til done. yummmmmmmmmmmmmmm

i haven't had that in ages, i might have to have it again soon
