I've been baking more pound cakes. I think this was the sixth one, and I still don't have a great recipe. As far as I can tell if you get it moist, then it's dense and heavy. Or you can have a fine crumb but dry. I still have another recipe to try, the Elvis Presley pound cake using heavy cream. I just want one that is really good so I can add it to my book of recipes.

Linnea!!!!!!!!!!!!!!  Well, since all you do is dump the stuff in the pan, yep, I should be fine!  The baking is being done more out of boredom than anything else.....and to keep me home.....gots to do the laundry and cleaning, and it's more fun outside....prolly should go to the beach before that damn oil spill gets here.....bastards....what really sucks is apparently, the seas turtles will be starting to come ashore to lay their eggs very soon.  Bummer!

Sorry, Celeste....no pound cake recipes...I cheat and buy them.....but have you tried using cake flour or even muffin mix instead of the flour?  I use banana muffin mix instead of the flour when I do my banana bread...it really does make a difference!  I still add the bananas and everything per the recipe, but it's a little lighter.

I only make a recipe by the directions once...then I start to play with it...sometimes the results are great, sometime.....um, not so great.  Just call me the Mad Baking Evil Scientist.....

When I make my infamous banana nut bread, I chop the pecans really fine and toss in some chocolate chunks (especially if the chocolate is rich Italian chips).

They don't last a day around here, in both households.

Bo uses cake flour when he is making his rolls. such a fine texture and melts in your mouth with sweet butter...

Damn it, I am making myself hungry.

Sifted cake flour, yes. On the new box now.

Banana bread I haven't tried cake flour, may do so next time to see. My recipe produces a heavy rich bread best eaten straight from the oven before it cools.

I have not tried the cake flour yet, but I do make sure the flour does get sifted before adding into the mixer (professional grade Kitchaid 6-qt). Bo like the machine because of the dough hook.

when I was 15 I baked 3 cakes for our camping weekend at a beach from my sports club...we havent had many youngsters in our club at that time...maximum 5 probably even less....all others were adults...nobody else bothered to think about "dessert" thank goodness I had done 3 cakes just in case and not just one...so whilst it wasn't "that much" for so many people it was ok-ish...when the pieces weren't cut into too big ones...

I was always better in baking then in cooking (though I guess by now its approx. equal) and miss baking over here (as at present I have neither the time, space nor proper equipment to do it really...)

i add about a third of a cup of dried chopped apricots per loaf.

I am doing a lot of cooking/freezing now to get through the next month while laid up. I plan on staying out of the kitchen after this surgery, as fire extinguishers take TWO hands to operate.
