Quick lesson for holly...

Wine (and port is a wine) can be mixed with only a few things, such as fruit juice to make Sangria, for instance. Most people drink their wine straight.

Liqueurs (most of which are basically flavored vodka) can be mixed with dairy products (as well as other things). Kahlua, Bailey's Irish Cream and the like are liqueurs.

actually i considered port along those lines too, holly. maybe it was the chocolate part of it that fooled me (or i'm just an uneducated git).

The way I understand it, chocolate port does indeed have chocolate mixed with the wine. There's no dairy in chocolate after all.

Chocolate port is a port that has a dark chocolate essence added to it after fermentation. Think of it as similar to chocolate covered raisins..... *drools* But much, much tastier.

I got started on port in Australia actually. In the Murray River valley, there are some of the top wineries and we used to go tasting on the weekends. Angel has some excellent wineries in the Barossa Valley, north of Adelaide herself. It's been a delicious experience since then....
