I think that's the best policy.  If she writes back, then use whatever term of address she uses for herself.  That's what I do, anyway.

It's not a stupid question at all.  What a minefield this has to be for a sub!  This one wants to be called (fill in the blank), while another one bristles at the thought. 

It's hard to see how you could go wrong by addressing someone by their chosen screen name, but even that can be tricky.  I've been called Ms. kttqnp, Miss kttqnp, and Mistress kttqnp.  Guess kttqnp is too generic and they feel they have to attach an honorific.  The only one that rankles me is Goddess.  I'm no Goddess. 

And whatever you do, don't start out with "Hey".  Or end with "Holla back", right, LadyPact?

One who wrote to me once had three honorifics.  She was called MistressLadyGoddess X or something.  I thought, "Ah come on - that's just being greedy".

And I'm with the "Babe is not a good first time honorific" crowd! In fact, I'm pretty sure that "babe" isn't a good one at all, ever.

My advice is don't start off with "Mistress" unless you are told to in their profile, I'm, well, I could be a Mistress, but I'm not YOU'RE Mistress... you know? As far as I'm concerned Ma'am is a good standby unless they state that they hate being called that in their profile. If they don't state it and get pissy over it then it isn't your fault. Personally my profile basically says not to bother even contacting me because I suffer from a really crappy attitude 99% of the time. That isn't true, it's only 99% of the time when I'm on this site, in real life I have an awesome attitude!!

Personally

I love being called Mistress - even if Im not your Mistress yet its the appellation I feel comfortable hearing.
I HATE HATE HATE being called Miss [Im not a Miss or a teacher]
I really absolutely HATE being called Ma'am [too American/old]
I find other appellations/honorifics cute eg Divine Goddess of the Universe. Or, Supremely Divine Creature from Heaven.

Just a few suggestions :D

I tend to skip over the salutation and read what's in the email.  Why focus on the appetizer when there's a main course?

Nope, I did not realize that. Guess that's my Texas upbringin' ringin' through - ma'am & sir are generally respectful in the nilla world I grew up in. In fact, I can remember my grandfather sittin' me down & talkin' to me abt manners & sayin' "yes ma'am" & "yes sir" [;)]
