The tied-in bone separates easily once cooking is finished, leaving an easy-carve joint, but one which has all the flavour of a traditional bone-in roast. I know it seems expensive, but it went a long way ... we fed about 7 adults and 3 kids for Xmas dinner, albeit with lots of trimmings and a turkey crown roast alongside (although most people went nuts for the Roast Rib Joint, so it took quite a nomming), but then there was plenty left for the boxing day "cold collation" of mixed cheeses, cured meats, leftover roasts, various pickles and the like. And don’t forget to add the bones to a stock or a casserole – there’s loads of flavour left in there, even after cooking :)
