Nixtamalization I saw this process, and the hand-grinding of the nixtamal on a Metate in Teotitlan del Valle, Oaxaca, at Restaurant Tlamanali. This village is also famous for weaving, particularly hand-spun wool textiles using natural dyes, of which I have several pieces. They made the most delicate tortillas and Tlayudas; the tortillas were wrapped around lightly sauteed squash blossoms for their Sopa de Flor De Calabaza. I make a killer Posole Rojo. I'm expert level Mexican cook.[8D]
