Food historian Catherine Brown has found mentions of haggis in an English cooking guide from 1615 which proves it was being eaten south of the border some 171 years before Robert Burns wrote his Address to the Haggis.

The English Huswife by Gervase Markham.. oldest mention of Haggis.

Haggis are raised on the mountain of Ben Nevis in the wilds of Scotland,
they are small about the size of a spaniel with long thick plaid fur to withstand the harsh winter. (this is how kilts are made)
They look most odd in as much as they have short legs on their right side and longer legs on the left with tufted hooves. This enables them to cling to the cliffs as they graze  working in a clockwise pattern up around the peak, then at the top they reverse and work their way back down. They normally rest or hide in holes in the mountain called pilocks.
The best way to catch a haggis is to start chasing it anticlockwise ,after a few lopsided steps they tip over and roll down to the bottom of the mountain. A tender haggis is one that fell from the very top, and bounced more than a dozen times in its descent.**

Nixtamalization

I saw this process, and the hand-grinding of the nixtamal on a Metate in Teotitlan del Valle, Oaxaca, at Restaurant Tlamanali. This village is also famous for weaving, particularly hand-spun wool textiles using natural dyes, of which I have several pieces.

They made the most delicate tortillas and Tlayudas; the tortillas were wrapped around lightly sauteed squash blossoms for their Sopa de Flor De Calabaza.

I make a killer Posole Rojo.

I'm expert level Mexican cook.[8D]
