I got this recipe for chicken alfredo that I love. You cut the chicken breast into strips and fry with onions and garlic. You add heavy whipping cream and grated real parmesan cheese. I do not measure I just add cheese and garlic until it tastes right. The cream with thicken as it heats. I add broccoli for more bulk instead of pasta and I am in heaven.

I also make a fake hamburger macaroni and cheese. I fry the burger and onion then add heavy whipping cream and whatever cheese I want to taste. I add broccoli and cauliflower instead of pasta.

Hardly a good recipe for a diabetic!!

Nice and tasty, yes.
One thing diabetics have to be very careful of is fried foods and dairy that can cause cholesterol in their system.
A lot of cholesterol treatment isn't suitable for diabetics.

I have cut down an awful lot of fried stuff in my diet since my visit to the US - on advice from a US diabetic specialist.
Short of a fried egg once in a while, we rarely fry anything at all these days.
And as much as we love all those yummy creamy sauces, we have to cut those down as well coz it's not healthy.
Not just because it's not healthy, but because in conjuction with a lot of other things it's easy to ratchet-up those nasty cholesterol building things that are hard to combat when you're a diabetic.
We haven't chopped them out completely, just cut down how often we have them.
The same for sugar. And I can't stand those sweeteners - they leave a nasty aftertaste.
We don't like our tea/coffee/horlics etc without sugar - we just cut down a little.
As for any carbonated drinks, whether sugar-free, diet version etc, we just don't have them at all now, not even the kids.

Maybe do this recipe once every couple of months - certainly not with any regularity.

I had to see a dietician after I was diagnosed with gestational diabetes. Perhaps it is different then regular diabetes. They tried to tell me to have 2 to 3 carb heavy foods such as bread, pasta or potatoes with every meal, little to no butter or fat and let my blood sugars fall wherever. Yeah with that much carbohydrates in my system that turn to sugar quickly my blood sugar was always over. I went with this type and my blood sugar is down in the 105 to 115 range an hour after eating instead of 140 to 160 it had been with the dieticians advice. Maybe Gestational is different then regular though.
