I'll have to try substituting eggplant or squash for the pasta sometime.  Do you do anything special to it?    Tonight is not a good supper night.  So far I've found the remains of a head of romaine.  Everything else requires actual cooking, and I'm feeling too draggy to cook.  I'm fighting the urge to order out, but I think I'm losing.

I cut off the ends, peel and slice them approx 3/4 inch (around the middle, not length).
Then I dip them into a mixture of eggs and milk (I substitute 1/2 and 1/2) and place them on a plate covered in Italian seasoned breadcrumbs.  After they are covered in breadcrumbs I carefully place the breaded eggplant  pieces into a skillet w/ some canola oil brought up to temperature and fry til tender.  After they are tender and taken out of pan, they are placed on paper towels and patted dry & seasoned.  Then I use them as lasagna pasta.

Hmmm... probably curried chicken & rice with veggies. Unless my housemate feels like being nice to me and sharing...
