ORIGINAL: KMsAngel i live in far northern new south wales, aus, now. a small town, probably not too many english beers, lagers, etc. in stock. the recipe calls for a large quantity of sugar: * 1 3/4 pounds Granny Smith apples * 3 cups 2 ounces water * 5 1/4 cups granulated sugar * Juice of 1 small lemon * Zest of 1 orange finely grated * 2 sticks of cinnamon * 1/4 teaspoon ground cardamom here's a sampling of beers. sorry, probably a bit more effort than you anticipated, lol http://www.coopers.com.au/#/the-order/the-hall-of-beer http://www.australianbeers.com/ http://en.wikipedia.org/wiki/Beer_in_Australia greedy, guiness was my first thought too, specially as i was having a pub lunch in an irish named pub at the time. my other thought was cider (strongbow is the more common label around here), but considering the pectin is extracted from apples, i thought it might end up more an apple butter than beer jelly! Shame you're not in Adelaide - there used to be (20 years ago, when I was there) a fantastic micro-brewery pub down in what used to be the docks area, whose strong, dark, malty beer was named "Old Preacher", after a priest in the area some 100 years previously, who had rather ... er ... "enthusiastically" tried to bring solace to the local "working girls" :) That stuff would be ideal. I honestly don't know what Guinness would do - it's certainly dark enough and bitter, but it's stout, not "ale", and it's quite syrupy - depends what the recipe had in mind. It's got bags of richness though, so I'd say give it a bash. I recall VB (Victoria Bitter) as being a slightly darker aussie ale than most of the light lagers they normally drink - I used to love the stuff, but I dare say an aussie will be along shortly to recommend something. <looks at list of beers> Any of those stouts would do as well I reckon ... especially the oatmeal ones. Also, if they have any "dark lagers", they'd work a treat. But I'll defer to local knowledge, so while we wait for an aussie, here is some music ... #beep beep, boppy bop de-beep beep ...
