If you're staying in motels, then getting one of those little car fridges and get an adaptor to plug it into a wall socket would help raw fruits and veggies stay fresh longer by being kept chilled at night. Or if the motel provides a fridge and a microwave, that would be ideal. Most of them have a little coffee maker so you could add packets of oatmeal and cup o' soups with paper bowls and plastic spoons. Hell, you could make it in the morning and put it into a thermos to use later in the day. Just run one pot of plain water through first to eliminate the coffee flavor. We have the small electric cooler. However, it gets filled up rather quickly with breastmilk. We are considering the larger size.
