Ok...so everyone has a fridge full of leftovers. What are your favorite ways of using them?

My absolutely favorite way of using up leftover turkey is to make Kentucky Hot Brown sandwiches. They are delicious!

Kentucky Hot Browns Recipe

8 thick white bread slices
1 lb. roasted turkey slices
Cheese Sauce (see below)
1 C. shredded Parmesan cheese
1 lb bacon cooked and crumbled
2 large tomatoes diced

Place bread on a baking sheet, and broil 3 inches from heat until toasted, turning once.

Arrange 2 bread slices in each of 4 lightly greased individual baking dishes. Top bread evenly with turkey. Pour hot Cheese Sauce evenly over turkey, and sprinkle with Parmesan cheese.

Broil 6 inches from heat 4 minutes or until bubbly and lightly browned; remove from oven. Top evenly with bacon and tomato. Serve immediately.

Note: A lightly greased 15- x 10-inch jellyroll pan may be substituted for individual baking dishes. Arrange bread slices evenly in bottom of pan. Top evenly with turkey and Cheese Sauce; sprinkle with Parmesan cheese. Proceed with recipe as directed.

Cheese Sauce:
Makes about 4 cups

1/2 C. butter or margarine
1/3 C. all-purpose flour
3 1/2 C. milk
1/2 C. shredded Parmesan cheese
1/4 t. salt
1/4 t. pepper

Melt butter in a 3-quart saucepan over medium-high heat. Whisk in flour, and cook, whisking constantly, 1 minute. Gradually whisk in milk. Bring to a boil, and cook, whisking constantly, 1 to 2 minutes or until thickened. Whisk in cheese, salt, and pepper. Remove from heat.  Serves 4.

I keep it simple because I don't usually feel like preparing anything the next day after all that work on Thanksgiving.  Even if I don't host, I'm still helping to prepare and serve and clean up.  After that I just want something easy for the rest of the weekend.

My favorite is to slap some white meat on white toast with mayo, salt and pepper.  Yummilicious.  Throw paper plate in garbage. Done deal. lol.

Hey, I just saw a recipe like that on a sandwich show we saw yesterday.

No leftovers here.  Thanksgiving day was on November 15th for us.  That was the day family
could get together.  Yesterday we spent it with friends...with as much as everyone ate they will be
dealing with leftovers for week's.

I was at a gathering yesterday where one of the guests peeled and cooked a 10 lb bag of potatoes for the mashed potatoe dish.  We had a couple of guest who could not make it and plenty of left-overs.  Looks like there will be plenty of potato pancakes for a few days.  You can also use mashed potatoes as a filling inside tortillas or taco shells rather than rice with your meat and beans.

Turkey, pork sausage and and sage and onion stuffing all cold on thick buttered bread, grrrrr! Serve with lots of cold beer.

Turkey leftovers usually become turkey salad. I enjoy it much since it's about the only time of the year I can get it.
