I admit I am medicated and doing emails may not be something I am up to, so here it is: Potato Soup Take any amount of potatoes, peeled or not depending on what you like, but peeled is the best At least half as many onions, cut/slice and leave some smaller ones whole (People will fight over the whole ones!) Or just cut some bigger ones in half. People really like part of an onion wrapping around the potatoes. Oh yum! Milk, depending on how much you are making, plan on at least half a gallon Cut potatoes in any manner you like, make some bigger than others as many potatoes will fall apart, which will thicken the soup. Boil them in a large pot with lots of water and a pot that is a non stick surface or you will be sorry later on. I salt and pepper while boiling them as potatoes absorb the spices, so don’t over salt, but some like lots of pepper because it makes the soup spicy. When potatoes are soft and you can put a fork in them without effort, drain half the water out and replace it with milk. Add the onions and other spices you would like. I use garlic and onion powder, parsley, sea salt and pepper. Cook until it is thick and more like a stew. If it doesn’t thicken because the potatoes didn’t fall apart as some potatoes seem to be harder and less likely to do that, you can thicken the soup with some flour, corn starch (do this in a cup or bowl and very slowly blend it in or it will lump on you), wondra (Is the best I have found) or even potato flakes, but the potato flakes will change the flavor and I don’t recommend them. Serve with sweet corn bread. You can use the box mixes, just add sugar to the batter before you bake. The spicier your soup, the better the taste with the corn bread. My neighbors would smell this cooking and come to the door with a bowl in their hands. It is really very simple, but doesn’t taste simple at all! Some even eat it for breakfast. It takes about half a day to thicken and be right. Time consuming, but well worth it!
